Creative Vegetarian Recipes: Indian roots and American experiences.

I have had several requests for recipes from friends and relatives over the years since I was in the Food Service industry for 36 of my 48 years of adult life. The only time I wrote recipes was for professional reasons since they are so time-consuming when done correctly. When I say correctly, I mean, duplicable. The common complaint that I have heard over the years is, It didn't turn out like yours. When following recipes, there so many variables that can change the taste. A medium Onion or Tomato could mean different things to different people. A quarter cup of Cilantro or Basil could be quarter cup loosely packed or tightly packed. These variables will inevitably end up with different resulting tastes. In my restaurant, we used a gram scale to weigh the ingredients, spices, and herbs for the precise result. Although this process takes time, in my opinion, and from my experience, it is the only way to have consistency in taste – an essential hallmark for achieving success in the restaurant industry.

Some friends had suggested that I create YouTube Videos. I would say no because taping recipes and handling social media was never my expertise. Nonetheless, a few months ago, my daughter-in-law requested an enchilada sauce recipe that she, my son, and grandkids enjoy. As I was finding ways to utilize my time during this COVID quarantine, I promised her that I would record a video and send it to her. That was the beginning of this endeavor. After watching my first recording, I have realized that there are several things I want to learn. I believe that the most excellent way to acquire knowledge is through experience! So, here I am, committing myself to learn what I don't know, logging and recording what I do know, and sharing my works in progress. Thank you in advance for your patience with me as I explore!

I am most excited that I got my wife, Nila, who has been my life partner for the past 41 years, to join me in this endeavor. It's going to be a fun and creative journey. I'm looking forward to eating a lot of good food together as a family and community! Lastly, I am very grateful for everything that the Universe has blessed me with and having a medium to share a part of my journey with you.
